What I Ate Wednesday – May

A little belated, here is my roundup of Wednesday eats for May. It’s been a bit of a mixed month as I came to the end of ‘cycle 2’ of my 90 day plan (more here), had a quick trip to the hospital (gallstones!), before starting with cycle 3 and then falling spectacularly off the healthy-eating wagon at the end of the month with so much champagne. There have definitely been some changes to my habits though. Old me would have groaned and eaten through whole packets of biscuits to manage the after-effects of a big night out. New me goes to the gym and sweats it out then gets back on track- pow!

I love it when my Gluten-Eating Husband cooks. Unfortunately it's not so often with him busy at work and me working part time - just so much easier for me to put dinner on. This tuna nicoise with a rare steak from our fishmonger was delicious

After a surprise visit to the hospital at the start of the month (gallstones!) I wanted to be kind to myself. This was one of many plant-based concoctions: a cauliflower rice salad with roasted veg and fresh herbs.
