I work on Wednesdays, so this means food is usually a prepare-ahead job. It also means I don’t usually get to the gym, so most things will be lower in carbs as it’s a rest day. This month, however, has been marred by illness for all of the B family, so haven’t been feeling as creative as usual! Nonetheless I hope you enjoy these gluten free meal ideas.
No choice but to borrow Baby A’s lunchbox for work on this day – a big green salad is hiding under some delicious smoked salmon and avocado. Fats ahoy!

Still trying to expand my definition of breakfast – as children we would occasionally have poached fish a the weekend. So quick if you prepare it in a lidded pyrex the night before! Served with amazing sundried tomato bread from Romeo’s
Brown rice and peas! As well as some chicken and roasted veg cooked with a BBQ rub. I use the Tilda sachets of wholegrain rice – so quick and easy.
And finally a little meal out at Leon. I love how gluten-free friendly, quick and high quality their food is. On this occasion I managed to resist the cakes & baked fries opting for a kale caesar salad.
