What I Ate Wednesday – April

I work on Wednesdays, so this means food is usually a prepare-ahead job. It also means I don’t usually get to the gym, so most things will be lower in carbs as it’s a rest day. This month, however, has been marred by illness for all of the B family, so haven’t been feeling as creative as usual! Nonetheless I hope you enjoy these gluten free meal ideas.

Brown rice and peas! As well as some chicken and roasted veg cooked with a BBQ rub. I use the Tilda sachets of rice - so quick and easy.

And finally a little meal out at Leon. I love how gluten-free friendly, quick and high quality their food is. On this occasion I managed to resist the cakes & baked fries opting for  a kale caesar salad.
